Lana's Scrumdiddlyumptious Homemade Granola
/How GOOD is cereal...Reese's Puffs, Captain Crunch, Lucky Charm's and COOOKKKIIEEE Crisp, the list goes on and on.
The delightful sugar high brought on by these cult classics was a necessity before preschool, but these day I need a breakfast that will give me the strength to hold a plank for over 30 seconds. (Gosh those things are TOUGH!)
Luckily, trainer Lana Titus recommended a heart healthy, fiber packed granola to breakup my love affair with Red Dye #40 and Blue Dye # 2.

Ingredients:
1/3 cup maple syrup
1/3 cup brown sugar
4 tsp vanilla extract
1/2 tsp salt
1/2 cup coconut oil (or vegetable if u prefer)
5 cups oats
2 cups sliced almonds
2 cups dried fruit (optional)
Directions:
1). Whisk together the maple syrup, brown sugar, vanilla extract, salt and oil in a bowl.
2) Mix in your oats, almonds and dried fruit.
3) Spread out on wax paper lined baking sheet. Bake at 325 degrees for 40 min. and rotate half way through!
